"Lyre's offers substitutes for virtually every major spirit category," describes Shell. "This allows me to craft all the classic cocktails people love, with or without alcohol, and they taste equally fantastic." 

Seedlip, established in 2014 by Ben Branson, pioneered the market for premium alcohol-free spirits. Now, innovative startups like the UK-based Three Spirit are pushing the boundaries even further, exploring the cognitive-boosting effects of certain plants within their beverages. 

"We wanted to provide a new option for those who enjoy the social rituals tied to drinking but seek a different kind of experience," explains Tatiana Mercer, co-founder of Three Spirit. "We're proving that choosing non-alcoholic isn't the same as saying no to pleasure – instead, we're using plants to create a unique and elevated social experience."

It's fascinating to note that the rise of non-alcoholic beverages coincides with a general decline in alcohol consumption across Europe. Shell sees a parallel with changing attitudes towards food: "It's very similar to the growth of veganism. People are becoming far more mindful about what they consume, whether it's food, caffeine, or alcohol." 

Furthermore, recent events like the COVID-19 pandemic and the cost-of-living crisis have spurred many to reassess their relationship with alcohol, factoring in both its financial burden and health implications. 

"It's vital to remember that alcohol amplifies whatever mood you're in," Shell emphasizes. "If you're feeling a bit down or isolated, drinking is only going to worsen those feelings."

The Power of Community and the Rise of 'Sober Curious' 

The pervasive nature of drinking culture, particularly in countries like the UK, can make cutting back or quitting alcohol feel isolating. Her community, boasting a massive following across Instagram and TikTok, primarily attracts those Gooch describes as "party girls" who were overdoing it with binge drinking and finding it negatively impacted their mental health. Interestingly, she's also seeing more young members, some who have never even consumed alcohol, having been turned off by their parents' drinking habits. 

Beyond the Old Fashioned 

For members of communities like Millie's, the availability of non-alcoholic recreations of their favorite drinks has been instrumental, allowing them to maintain the familiar rituals of socializing without the negative effects. "I'd often just opt for a Diet Coke, but then all these incredible new drinks started to appear," Gooch says, adding that she believes they can help people gradually transition away from alcohol. "It can be hard to break those old habits, but with alcohol-free options, you can maintain the social aspect with something different in your glass." 

For most people, these alternatives allow for moderation, greater inclusion in social settings, and provide a heightened sense of control when out with friends. Shell explains, "With a range like Lyre's, it's easy to transition smoothly between alcoholic and non-alcoholic drinks throughout a night out. Plus, they look identical, which can be important for social comfort." 

Gooch does express some reservations, however. She's concerned that these beverages could inadvertently reinforce aspects of a toxic drinking culture. "If these drinks replace, say, a cup of coffee in situations where alcohol wasn't a major presence anyway, we might be further entrenching that mindset around drinking."

Meanwhile, Professor David Nutt, a prominent British neuropsychopharmacologist, is at the forefront of developing safer alcoholic alternatives. His creation, Sentia Spirits, targets the GABA receptors in our brains with herbs to mimic the relaxing qualities of alcohol. 

In America, brands like Cali Sober have begun isolating THC, the active chemical in cannabis known for inducing a "high." The dream of achieving altered states without the downsides is tantalizing, but is it achievable? Shell remains optimistic but urges caution until more research is available. 

"With a glass of wine, we know the effect it will have," Shell emphasizes. "With things like Sentia and other functional spirits, it's still early days." 

One thing remains certain: choosing a non-alcoholic cocktail will never leave you feeling worse than before you had it. There's something undeniably comforting in the familiar setting of a bar – the soft lighting, a miniature napkin, the clinking of ice. That first satisfying sip, frothy and flavorful… 

"It's about treating yourself to something special," says Shell. "Even if it's a placebo, it can be a wonderful one."

GABA is a neurotransmitter that plays a key role in calming the nervous system. "It's important to remember that with alcohol, we have a long history of understanding its effects," he says. "With things like Sentia, or even drinks utilizing plant extracts, we're still discovering how they interact with our bodies and minds." 

The ultimate goal, of course, is a true revolution: a beverage that provides the buzz, the sense of loosening up, the social lubricant effect of alcohol – all without the potential for hangovers, lowered inhibitions leading to regrettable decisions, or long-term health risks.
